Cut the asparagus, spring onions and shiitake into thin slices. Put them in 3 separate bowls.
Cut the chilli peppers in half and remove the seeds.
Boil the soba noodles according to the instructions. Rinse in a strainer under cold water and leave in a large bowl filled with cold water.
Heat sesame oil in a frying pan and sear the shiitake and chilli. Return them to their bowl. Sear the asparagus with some additional sesame oil if needed. Add the sesame seeds and cook until fragrant. Add half of the spring onions, return the shiitake to the pan - and if you like a bit of heat, add the chilli. Mix with the soba noodles and season with soy sauce, salt and wasabi.
Sprinkle with the rest of the spring onions and enjoy.
