Fregola Sarda with leeks


  1. Add Fregola to a pan with boiling water, add salt and simmer for 10 minutes. Stir occasionally. Drain and set aside.
  2. Wash vegetables. Cut the leeks into fine strips and chop the peppers.
  3. Heat the olive oil in a frying pan, add the strips of leeks and peppers, and cook on a low heat.
  4. Add Fregola to the vegetables with the remaining ingredients in the pan.
  5. Season with salt and pepper. Finely chop parsley and sprinkle before serving.
