- Add Fregola to a pan with boiling water, add salt and simmer for 10 minutes. Stir occasionally. Drain and set aside.
- Wash vegetables. Cut the leeks into fine strips and chop the peppers.
- Heat the olive oil in a frying pan, add the strips of leeks and peppers, and cook on a low heat.
- Add Fregola to the vegetables with the remaining ingredients in the pan.
- Season with salt and pepper. Finely chop parsley and sprinkle before serving.
