Fregola Sarda with leek

  1. Place the pasta in a pan with boiling water, add the salt and let it simmer for 10 minutes, stirring occasionally. Drain and set aside.
  2. In the meantime, wash the vegetables. Chop the leek into fine strips and dice the peppers. Heat the olive oil in a frying pan and sauté the vegetables on low heat until golden brown.
  3. Add the pasta and the tomato sauce to the vegetables, bring everything to the boil again. Season with salt and pepper, add the two pestos and stir for a minute.
  4. Serve the pasta immediately, sprinkled with finely chopped parsley.

When are the 2 varieties of pesto added, also the tomato sauce. Pesto, I understand, is never cooked.
