Avacado Mint Hummus

Avacado Mint Hummus


  1. Soak the chick peas in cold water overnight and then cook according to pack instructions. Let the chick peas drain well and allow to cool.
  2. Add water, tahini paste, lemon juice, olive oil and half avocado to a the chick peas and puree with a hand mixer
  3. Chop the mint and mash the rest of the avocado with a fork. Add to the puree.
  4. Season with salt and pepper and garnish with fresh mint.
