Barley salad with parsnips and carrots

preparation

  1. Cook the barley in salted water.
  2. Peel the carrots and parsnips, finely dice and cook with the barley for a minute. Then drain everything and place on a baking sheet to cool down.
  3. In the meantime, mix the ingredients for the dressing in a bowl, add the lukewarm roll barley and marinate the salad for about 10 minutes. Serve chilled.
